Easy Italian Sausage Ragu

I know I’ve said this before, but…..I love Italian food!  I could live on a steady diet of pasta and pizza and be one happy girl.  So I’m always trying to come up with new ideas for pasta sauce, because you can never have too many ways to sauce that delicious pasta.

Since I also like things that are easy, I knew I hit pay dirt when I came up with this idea, because it is one easy sauce.  The sausage gives the sauce so much flavor, that you really don’t have to add a whole lot more to it.  An onion, some garlic, a little Italian seasoning, some fresh parsley at the end to brighten the flavor and you are good to go.  What is really key to making this sauce totally awesome, is to simmer it for a looooong time, like 5 hours long.  That gives all the flavors a good long time to marry and lets the sauce get nice and thick.  When it’s done, it’s SOOOO good.

If you can’t let it simmer for 5 hours, let it simmer for at least 2 hours.  It only needs to be stirred occasionally and it will fill your house with an amazing aroma.  When it’s dinnertime, all you have to do is boil some pasta, make a quick salad and you’ll be ready to go and your family will think your amazing because you made them this fantastic Italian dinner!

Easy Italian Sausage Ragu

  • 1 tbsp olive oil
  • 1 lb of your favorite Italian sausage, casings removed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup white wine
  • 1 can whole tomatoes (preferably San Marzano)
  • 2 tbsp fresh parsley, chopped
  • hot cooked pasta

Heat oil in a large pot or skillet over medium high heat.

Brown sausage, breaking up into small pieces.

Once sausage is broken up, add onion and garlic and continue cooking until sausage is no longer pink and onions are soft.

Season with Italian seasoning, salt and pepper.

Add wine, bring to a boil and let cook for a minute or two.

Stir in tomatoes, breaking them up with the spoon.

Simmer for at least 2 hours and up to 5 hours, stirring occasionlly.  The longer it simmers, the better it will get.

Stir in parsley and serve over hot pasta.
