Red Onion Dried Cherry Marmalade

If you’re looking for a way to dress up your dinner, have I got a condiment for you.  This red onion dried cherry marmalade is so amazing!  It is a perfect topping for pork tenderloin, chicken or duck.  It’s sweet and savory and has just a little bit of heat from just a tiny bit of jalapeno.  I also think it would be delicious served with cheese and crackers.  It would taste especially great with some creamy brie cheese.  And while we’re at it, use it to top a turkey sandwich for a perfect lunch.  There are tons of options for this delicious condiment.

Just a couple of notes when you make this.  First of all, don’t be scared by the amount of onions in the recipe.  I know it looks like a lot, but they reduce down quite a bit and the sugar and vinegar really mellows out their flavor.  Secondly, be patient.  It takes a good 30 to 35 minutes to reduce down, but it’s worth the time and you only have to stir it occasionally.  Lastly, you can absolutely make this ahead of time, refrigerate and then reheat when you’re ready to use it.  It makes about 2 cups of marmalade.

Red Onion Dried Cherry Marmalade

  • 1 cup sugar
  • 2/3 cup raspberry balsamic vinegar
  • 2/3 cup red wine vinegar
  • 2 lb red onions, thinly sliced
  • 1 lb dried cherries
  • zest from 2 oranges
  • 2 tbsp jalapeno pepper, finely minced

Bring sugar and vinegars to a boil in a large sauce pan.

Stir in the onions, cherries and orange zest.

Cook over medium to medium high heat (you want it to stay at a gently boil, not a hard boil), stirring occasionally for 30 to 35 minutes, until most of the liquid is gone.

Remove from heat and stir in jalapeno pepper.

Serve warm or at room temperature with pork, chicken or duck.
