On the Hunt for a Simple, Easy Side Dish

As we head into the summer grilling season, I’m always on the lookout for easy side dishes to serve with whatever we happen to have on the grill or smoker. Be it steak, pork chops, burgers or bratwurst, a simple side dish is always welcome.

Why a simple side dish? Because we don’t want to spend a lot of time indoors cooking when the weather is nice! It’s way more fun hanging outside around the grill, talking and having a glass of wine.

So, where to start on finding the perfect side dish for those grilling days? Potatoes!

Why? Because my whole family are potato lovers. French fries, potato wedges, baked potatoes, oven-roasted potatoes – they are equal opportunity potato eaters!

So, I had my start!

Quick and Easy Oven Roasted Potatoes

I really did want an easy recipe that didn’t take long to prepare or use a long list of ingredients. So, I came up with this parmesan roasted potatoes recipe.

It’s a simple, amazing recipe that takes little time to prepare and cooking time is around 30 minutes. That leaves plenty of time to relax and enjoy the outdoors.

Oven roasting is about as easy of a cooking process as it gets, so I decided to go that route.

Making the Oven Roasted Parmesan Potatoes

I started with a base of potatoes, onions and garlic. Just roasting those three things together would be pretty delicious! 

However, I also really love cheese on my potatoes. Cheesy hash browns and potatoes au gratin are a couple of my favorites. 

So, to keep it easy, I added in some pre-grated parmesan cheese. Not even any kind of parmesan mixture – just regular old parmesan cheese.

I start by adding parmesan to some melted butter, garlic, olive oil and salt and pepper. Put the potatoes and onions in a large bowl and toss together. You get yourself some nicely coated potatoes.

But, we’re not done with the cheese yet!

Once coated, place potatoes in a parchment paper-lined baking dish. I try to get as much of a single layer as possible to expose as many of the potatoes as possible. 

At this point, I sprinkle more cheese all over the tops of the potatoes. I find that’s the best way to get as much cheesy crust as possible when baking the potatoes. 

In about 30 minutes you have something amazing for the dinner table. These roast potatoes get tender and at the same time, a little crispy and full of cheesy parmesan flavor with a hint of garlic. SO GOOD!

What Are The Best Potatoes to Use for Oven Roasted Potatoes?

I prefer Russet potatoes for this parmesan potatoes recipe. I feel they hold up well in the baking process. Yukon gold potatoes are a good substitute as they have relatively the same consistency as the Russets.

I tend to stay away from the more waxy potatoes (like red potatoes) as I don’t believe they roast as well in this recipe.

Tips and Tricks

  • This recipe can easily be doubled. Just divide the ingredients between two baking dishes.
  • For easy cleanup, line your baking pan with parchment paper. Aluminum foil also works to line the pan, just make sure you coat it well with cooking spray.
  • The potatoes can be assembled ahead of time. Follow the instructions up to the point that they’re ready to bake. Cover the pan tightly with aluminum foil and refrigerate until ready to bake. When ready to bake, take the potatoes out of the refrigerator while the oven preheats. Remove foil before baking. They may need an extra few minutes to roast.

  • Russet potatoes – These are the best option for this recipe.
  • Onion – Yellow or red onion both work in this dish.
  • Fresh garlic –  I prefer fresh, but in a pinch you can substitute 1/2 tsp of garlic powder.
  • Butter – I recommend using unsalted.
  • Olive oil
  • Salt
  • Black pepper
  • Grated parmesan cheese – I find pre-grated cheese to be very convenient, but your can certainly grate your own if you prefer.

How to Make Parmesan Oven Roasted Potatoes

  • Preheat oven to 425 degrees.
  • Scrub potatoes and cut into thin slices about 1/8″ thick (leave skin on).
  • Cut onion into thin slices.
  • Mix garlic, melted butter and olive oil together in a small bowl.
  • In a large bowl, toss potatoes and onions with the butter mixture, salt, pepper and 2 tbsp parmesan.
  • Spread mixture evenly in a 9×13 baking dish, lined with parchment paper.
  • Sprinkle remaining 1/4 cup parmesan over the top.
  • Bake in preheated oven for 30-35 minutes, until potatoes are golden brown and tender.
  • Serve immediately.

  • 3 large russet potatoes
  • 1/2 medium onion
  • 1 large clove garlic, minced
  • 2 tbsp butter, melted
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup plus 2 tbsp grated parmesan cheese

Instructions

  1. Preheat oven to 425 degrees.
  2. Scrub potatoes and cut into thin slices about 1/8″ thick (leave skin on).
  3. Cut onion into thin slices.
  4. Mix garlic, melted butter and olive oil together in a small bowl.
