These chicken taco pinwheels are yet one more way to use cooked chicken.  Monday I shared this delicious chicken salad and Wednesday I shared these healthy baked chicken taquitos.

These chicken taco pinwheels are fantastic, because they taste great and you can whip them up in minutes.  They’re perfect for those times that you need a last minute appetizer!  If you’re feeding a crowd, you could easily double  or even triple this recipe.  Once you set them out, you’ll see them disappear in no time!

Chicken Taco Pinwheels

  • 8 oz cooked, shredded chicken breast
  • 1- 8 oz package light cream cheese
  • 1 packet taco seasoning (if you can find it, I recommend Trader Joe’s)
  • 1 package fresh spinach
  • 3 flatbreads

Stir chicken, cream cheese and taco seasoning together until well combined.

Spread a fairly thin layer of the chicken mixture onto the flatbreads, leaving about a 1/2 inch border.


Top with a layer of spinach.

Roll flatbread up, lengthwise.

Cut into 3/4 inch pieces.
