This Asian style cucumber salad is incredibly easy to prepare. It’s so crunchy and has an amazing nutty, tangy flavor, which makes a perfect side dish with so many things.
This recipe was born after my husband and I took a trip to Gulfport, FL. One of the restaurants that we really enjoyed was called O’Maddie’s. They have a really great menu and one of my favorite items on the menu was their Asian cucumber salad.
After we got back from that trip, I set out to re-create that salad in my own kitchen. It turns out that it’s incredibly quick and easy to make. And most importantly, my home version tastes amazing and reminds me of that salad in Florida.
The recipe calls for very few ingredients, most of which you probably already have on hand. The prep work takes little time and the result is a quick and easy salad that’s crunchy, fresh and has a wonderfully, nutty sesame flavor.
This is also one of those salads that just gets better the longer it sits. It’s a simple side salad, but has such a complex, delicious flavor. So, make sure you give it a chance to marinate, because the flavor only gets better.
What Ingredients Are Needed To Make This Asian Style Cucumber Salad?

- Cucumber – An English cucumber is going to work best. The skin is thin and tender and since an English cucumber is seedless, it has less liquid content, which helps prevent the salad from getting soggy.
- Shredded carrots – Pre-shredded carrots are going to make this salad even quicker to make, but you can certainly shred them yourself.
- Rice wine vinegar
- Sesame oil
- Salt and pepper
- Cilantro
How Do You Make This Cucumber Salad?
- Combine cucumber and carrots in a mixing bowl.
- Whisk the sesame oil into the rice wine vinegar until well combined.
- Stir in salt, pepper and cilantro.
- Pour dressing over cucumber mixture, tossing to thoroughly combine.
- Allow to marinate for at least 1 hour, so that the flavors combine.

Asian Style Cucumber Salad
This Asian style cucumber salad is incredibly easy to prepare. It’s so crunchy and has an amazing nutty, tangy flavor which makes a perfect side dish for so many things.
Ingredients
- 1 large English cucumber, quartered lengthwise and then thinly sliced
- 2/3 cup shredded carrots
- 1/3 cup rice wine vinegar
- 3 tbsp sesame oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp fresh cilantro, finely chopped
Instructions
- Combine cucumber and carrots in a mixing bowl.
- In a small bowl, slowly whisk the sesame oil into the rice wine vinegar until well combined.
- Stir in salt, pepper and cilantro.
- Pour dressing over cucumber mixture, tossing to thoroughly combine.
- Allow to marinate for at least 1 hour, so that the flavors combine. This will get better the longer you let it sit.
