Have I mentioned that I love to grill in the summer? I think just about everything tastes better after it spends some time on a grill. Plus the kitchen clean-up is easy (no pots to wash) and you can lounge on the deck while things are cooking!
Saturday night turned out to be a perfect night to grill. After a Saturday afternoon “monsoon”, the skies opened up to a beautiful crystal blue and the deck was beckoning us to hang out! So Steve and I headed out to our favorite meat market, Von Hanson’s, for some delicious bacon wrapped sirloins. Then it was off to the grocery store where we picked up some corn on the cob and some HUGE bakers for these fabulous grilled potatoes.
These potatoes are so easy to make and taste amazing! The secret is that you baste them in garlic butter, before you grill them AND after! They’re easy because you par-cook the potatoes in the microwave before you grill them, so they only take a few minutes on the grill. You could easily par-cook the potatoes earlier in the day so they’re ready when you’re ready to grill. I made three large potatoes in this recipe and that’s enough for four servings. You can easily adapt this to however many servings you need, just melt more butter as needed.
Grilled Potato Rounds
- 3 large russet potatoes
- 4 tbsp butter, melted
- 2 cloves garlic, grated
- 1/4 tsp salt
- 1/4 tsp pepper
Scrub potatoes and pierce all over with a fork (to allow steam to escape).
Microwave for 5 to 7 minutes until starting to get soft.
Let potatoes rest for about 15 minutes or so, until they’re cool enough to handle.
Meanwhile, place butter in a microwave safe dish and melt in the microwave.
Grate garlic into the dish, add salt and pepper and stir until well combined.
Slice potatoes crosswise into 1/2 inch rounds.
Brush both sides of each round with butter mixture.
Cook on a grill preheated to medium high heat for about 4 to 5 minutes per side until you have golden brown grill marks.
Brush again with the garlic butter.
