Thursday’s Recipe Rerun – A Mother’s Day Menu

Are you hosting a Mother’s Day celebration this year?  Are you still looking for an awesome menu to prepare?  Well, if you are, I have a delicious, springy menu that will make your Mother’s Day celebration perfect!

Start the meal off with this Kale Salad with Lemon Vinaigrette.  It’s healthy, light and full of tangy, bright flavors, everyone will love it!

For the main course, this Shrimp and Roasted Asparagus Risotta will pair perfectly with the kale salad and will wow your guests!  It’s kept light and fresh with shrimp and tender, spring asparagus…..it’s SO good.  A loaf of crusty bread will go perfectly with this.

Of course your celebration needs a yummy dessert and these Cream Puffs with Mascarpone Cream Filling will not disappoint.  They’re easy to make and are creamy and delicious without being too heavy.

Finally, if you want to serve a light and refreshing cocktail, this Perfect Mojito is….well….perfect!
