Since you’re here celebrating with me today and no celebration is complete without some great food, I want to share this great appetizer with you.  It’s really easy to make, looks really colorful and tastes fantastic!  This recipe comes from Nicole.  She makes this one when she gets together with friends at school.  She told me about it awhile ago and I’ve been waiting for the right time to try it because  I thought it sounded SO good.

I’m sure you’ve all had some kind of layered taco dip before, but this one is a little different.  You mix sour cream, cream cheese and taco seasoning together for the base and then there is a layer of ground beef mixed with taco seasoning followed by layers of lettuce, cheese, tomato, green onion and cilantro.  You could also add sliced avocado, olives and anything else you like to top your tacos with.  The nice thing about this dip is that you can make everything ahead of time and assemble it right before you’re ready to serve it.

Nicole’s Taco Dip
 
 
 
  • 1 lb ground beef (I used 93% lean)
  • 1 package taco seasoning
  • 1 8 oz package light cream cheese
  • 1 cup light sour cream
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chopped tomato
  • 1/4 cup sliced scallions
  • 2 tbsp cilantro
Chop tomato, onion and cilantro.
Heat skillet over medium high heat.  Add ground beef, breaking up and cooking until no longer pink.  Add 1/2 package of taco seasoning and cook according to package instructions. Remove from heat and set aside.
In a mixing bowl, add cream cheese, sour cream and remaining taco seasoning.  Combine well.
Spread mixture on the bottom of an 8×11 serving dish.
Top cream cheese mixture with ground beef (you may not need all of the ground beef), followed by lettuce, tomatoes, cheese, scallions, and cilantro.
Serve with tortilla chips.
