Sometime I find recipes in rather unusual places. But, hey, if it sounds good, who cares where it came from. I happened upon this recipe in the “South Beach Diet” book. I love flavored mayonnaise and this one sounded so delicious with the combination of lime and cilantro. I just had to give it a try.
It turned out to be so flavorful and good! What I also love is that the lime juice thins the mayo out a little bit, so not only is it perfect for spreading on a sandwich, it’s also the perfect consistency for dipping veggies in. Oh…and did I mention it takes about 2 minutes to make? So if you happen to have a spare 2 minutes, give this a try and dress up your next sandwich!
Cilantro Mayonnaise
- 3/4 cup light mayonaise
- 3/4 cup cilantro
- 1 tsp reduced sodium soy sauce
- juice of half a lime
Place all ingredients in a blender or food processor. Blend until smooth.
Spread on sandwiches or use as a dip for veggies.
