Slow Cooker Beef Tips in Red Wine

This is an incredibly easy dish to make.  It takes 10 minutes or less to get this ready for the slow cooker AND because it uses stew meat, it’s very affordable!  I was able to quickly put this together after church yesterday, then while I was busy with other things, the slow cooker did all of the work for me.  When it was dinnertime, all I had to do was cook the rice and make a salad.  I had dinner on the table in about 15 minutes, totally stress free!

I know that beef tips are usually made with a more expensive cut of meat, like sirloin.  But since this was going into the slow cooker, I knew that I didn’t have to spend the extra money, stew meat would work just fine.  After slow cooking, the stew meat came out super tender and was so delicious!

Slow Cooker Beef Tips

  • 2-2 1/2 lbs stew meat
  • 1 large shallot (or 1 medium onion)
  • 4 cloves garlic
  • 1 tsp herbes de provence
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup dry red wine
  • 2/3 cup sour cream (I used light)
  • fresh chopped parsley (optional)
  • cooked brown rice

Thinly slice shallot and mince garlic.

Place stew meat in slow cooker.  Add shallot, garlic, herbes de provence, salt and pepper.

Stir to combine.  Pour wine over mixture.

Cook on high for 4-6 hours or on low for 8-10 hours, until meat is very tender.

Stir in sour cream until well combined.

Stir in parsley, if desired and serve over cooked rice.
