I love mashed potatoes and I really love garlic mashed potatoes.  Usually, I make roasted garlic mashed potatoes, but that can be time consuming.  You have to make sure that you allow yourself enough time to roast the garlic before you make the potatoes, which takes about an hour.  On a busy weeknight, that is probably not going to be an option.

So what do you what do you do when you want garlic mashed potatoes and you’re pressed for time?  Boil the garlic cloves along with the potatoes.  That will soften up the garlic and will mellow the flavor and will make potatoes that are garlicky and delicious!

I made these potatoes a couple of nights ago to go along with my Caprese Chicken.  It made a delicious side dish and took so little time to make!

Easy Garlic Mashed Potatoes

  • 4 medium size russet potatoes
  • 4 cloves garlic
  • 1 cup milk (I used 1%)
  • 1/4 cup butter
  • salt and pepper


Peel potatoes and cut into quarters lengthwise.  Crush garlic cloves slightly and peel.  Place potatoes and garlic in a large saucepan and cover with cold water.  Bring to a boil over high heat.  Reduce heat so potatoes don’t boil over and cook for about 15 minutes until potatoes are tender when pierced with a fork.

While potatoes are cooking, heat butter and milk together.  Drain potatoes and garlic in a colander and return to pan.  Pour about 1/2 of milk and butter mixture over potatoes and garlic.  Start mashing mixture and as milk mixture becomes incorporated, add a little more at a time until potatoes are creamy and smooth.

Season potatoes with salt and pepper to taste and serve while hot.
