As I said in yesterday’s post, my sweet tooth is out of control.  I also have more cake mixes in my pantry than any one person should have.  Last summer I got a little carried away with couponing and stockpiled a few too many cake mixes.  So when I find a recipe that uses a cake mix in a different way, I’m interested.  So when I found a recipe called  Gooey Butter Cake,  at Mrs. Happy Homemaker, I knew I had found something that I needed to try.

The original recipe called for a yellow cake mix, but the funny thing is, with all of my caked mixes, I didn’t actually have a yellow cake mix on hand…..go figure.  But I did have a lemon cake mix and I thought that would be very delicious in this recipe and I was not disappointed.  The end result tastes a little bit like a lemon bar.  The cake is more of a crust, so it is more dense than a regular cake and the cream cheese layer  adds a little bit of creaminess.  It is absolutely delicious and it really couldn’t be easier.

 

Lemon Butter Cake

For the crust:

  • 1 lemon cake mix
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 tsp vanilla

For the topping:

  • 1 – 8oz package cream cheese (I used light)
  • 2 eggs
  • 2 tsp vanilla

Preheat oven to 350 degrees.

Mix cake mix, melted butter, eggs and vanilla until well combined.  Press into a 9×13 pan coated with cooking spray.

For the topping, beat cream cheese, remaining 2 eggs and vanilla until creamy.  Pour mixture over crust.

Bake in preheated oven for 40 minutes.  Remove from oven and sprinkle with powdered sugar.

Let cool before serving.
